Pumpkin Spice Oatmeal Recipe

It’s fall!

Melons are a perfect breakfast. They are fun to chop in half and, once halved, become two perfect bowls of delicious fruit, ready to scoop and eat with or without granola. But the air was cool this morning, which led me to the grand celebration of Pumpkin Spice Oatmeal for breakfast. Yay!

If you make food choices based on deliciousness and not time, this is for you.

Super Simple Pumpkin Spice Oatmeal

 

  • 1/2 cup quick oats

  • 1 cup water

  • 2 tablespoons canned pumpkin

  • 1 teaspoon cinnamon

Microwave for 3 minutes or until it bubbles.

Optional toppings include agave syrup, nuts, flax seeds, sliced banana or apple.

 

A quick note about the measurements of this recipe. “Teaspoon” and “tablespoon” mean the same thing as “1 clove of garlic”. Does anyone use only one clove of garlic? Not me. The great thing about this recipe is you absolutely cannot mess it up. If you don’t have time to microwave it, you won’t get sick from eating it uncooked. If you accidentally leave it on a counter it will make a great snack when you find it later in the day. If you use more pumpkin than oatmeal, hey, I’m not going to judge.
